Grilled Caprese Chicken

It’s time for Sara to check out “What’s For Dinner!” This week, it’s a quick, easy take on grilled chicken, combining fresh tomatoes and boneless, skinless chicken from Carter & Sons Produce and Butcher Shop.

From Sara: One of my favorite fresh combinations is mozzarella cheese and tomatoes with balsamic glaze. I serve it as side or make it a quick lunch quite often. So I decided to combine it with another summer favorite–grilled chicken! I also grabbed some sweet corn from Carter’s and threw it on the grill Bobby Flay style. You can find the recipe here. I simply cut up some other fresh veggies from Carter’s to round out a light summer meal.

Oh…one last thing. You can purchase balsamic glaze, but it’s easy to make your own without using sugar. Buy a quality balsamic vinegar and let one cup simmer at medium heat about 15-20 minutes. It should reduce by more than half and the consistency should be similar to warmed honey.

Grilled Caprese Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 cracked pepper
  • 1 tbsp olive oil
  • 1 ripe tomato, sliced
  • 8 0z water-packed, fresh mozzarella
  • 1/4 c balsamic glaze

Combine Italian seasoning, salt and pepper and mix thoroughly. Rub chicken breasts all over with olive oil and sprinkle spice mix all over chicken breasts. Grill at medium heat for 5-7 minutes each side or until internal thermometer reads 165 degrees.

Remove from grill and place on plates. Layer tomato and mozzarella slices on top and drizzle with balsamic glaze.
